Sweet Amalia Market and Kitchen operates an aquaculture farm in Cape May, supplying oysters to top Philadelphia restaurants. Member of the Northeast Organic Farming Association. We shot with a small crew—AC, sound, gaffer, key, and PA—working around the tide schedule in August heat. The oyster beds stretched across exposed flats at low tide, then disappeared under water hours later. The hip waders got us just as soaked from sweat as they would have from the bay.
